HELPING THE ELDERLY Density of food is a major factor to those who have trouble eating, like injured soldiers or the elderly. PERonalized Food using Rapid Manufacturing for the Nutrition of elderly ConsumErs (a.k.a. PERFORMANCE) is a project for which the goal is to produce personalized meals by 3D printing that are both nutritious and appealing. The project cost more than $4 million dollars to complete, but PERFORMANCE now has a plan to help the elderly. Each elderly person in a residence would have an individualized profile containing information about their nutritional needs, portion size and food texture. This profile is then sent to a local production unit via QR codes, where the production firm will print out each personalized meal after scanning the code. The meal is then delivered to the patient in the nursing home [15]. According to Matthias Kà ¼ck, project coordinator and CEO of a food company called Biozoon, 1/5 of residents in nursing homes need a special diet, whi ch makes it all the more important to get high quality and healthy food to such a high number of people. Effects on health Meals are an important part of elderly people’s lives, both for their physical and mental health. Meals are also socially important for elderly people, so PERFORMANCE’s goal is to prepare â€Å"food in such a way that these people re able to eat safely and even enjoy their meals† so they won’t be embarrassed to be eating something that looks very different [16].
